Makes 30 balls

These vitality balls were developed especially for The Seventh Seal Luxury Retreat by The Green Gourmet. As well as being delicious and nutrient-packed, they celebrate the best of Bali's local ingredients: cashews, cacao and fresh ginger. Guests enjoy these for an afternoon snack while on retreat, and now you can do the same at home.

Why you and your body will love these

These chocolately balls provide plenty of protein, good quality carbs and healthy fats to give you an energy boost mid-morning or mid-afternoon. The cacao provides a healthy dose of magnesium and the ginger ups the antioxidant value (and tastes wonderful too).

To help the mixture come together, you can use coconut oil, which may help to boost metabolism and reduce inflammation in the body; or use tahini, which is a fabulous source of iron and calcium.

For a fructose-free version, omit the dates and use both the coconut oil and tahini plus a couple of tablespoons of rice malt syrup to taste.

Ingredients


1 cup cashews (or any nuts you prefer)
½ cup whole oats
½ cup shredded, unsweetened coconut
½ cup raw cacao powder
½ teaspoon good quality fine sea salt or Himalayan salt
2 teaspoons vanilla bean paste or powder
16 fresh Medjool dates, pitted and roughly chopped
2 Tablespoons freshly grated fresh ginger (or to taste)
2 Tablespoons coconut oil or tahini

Method


Place cashews, oats and shredded coconut in a food processor. Blend until the dry ingredients are finely chopped and almost a powder.

Add the cacao powder and salt and blitz to combine.

Next, add the vanilla, dates, ginger and coconut oil or tahini. Process until the mixture comes together in a ball. If the mixture is a little dry, add a splash of water to help it come together.

Roll small tablespoons into balls and toss in the extra toasted shredded coconut.

Chill before eating and store in a sealed container in the refrigerator for up to 2 weeks. In Bali, we store and serve these straight from the freezer.
