Here's a sample of the deliciously healthy recipes we are constantly creating for our retreat guests. Have some fun recreating these delicious dishes you had on retreat. Or if you haven't visited The Seventh Seal yet, these will give you a taste of what's in store.

The Naked Mexican Burito

Serves 6–8 as a side salad

This show-stopping salad is the perfect dish to take to a barbeque. Or serve it as a side to fish grilled with Mexican spices, or by itself for a light lunch. Don't be put off by the different layers and list of ingredients, as putting this together is a cinch.

It's best to soak the cashews overnight for the cashew cream layer, but if you're short on time, you can soak them in hot water for just half an hour.

Why you and your body will love this

Nutritionists often say we should aim to 'eat a rainbow' every day, and that's literally what you will do with fiesta in a bowl which provides your body with multi-coloured sources of vitamins, minerals, antioxidants and omega-3 fatty acids for cell repair and protection.

Corn layer


3 cups fresh corn kernels, scraped from the cob
1 red capsicum, finely diced
½ cup fresh coriander, including some of the stems, finely chopped
2 tablespoons fresh lime juice, or to taste
1 tablespoon extra virgin olive oil
2 teaspoon cumin seeds, lightly toasted and lightly crushed
Fine sea salt and freshly ground black pepper to taste

Guacamole layer


2 large avocados, roughly chopped
½ cup fresh coriander, including some of the stems, finely chopped
2 tablespoons fresh lime juice, or to taste
½ teaspoon fine sea salt, or to taste
Pinch cayenne pepper or a shake of hot sauce

Salsa layer


4–6 ripe tomatoes, finely diced (about 1½ cups when diced)
2 spring onions, finely chopped, including some of the green stems
1 tablespoon pickled jalapeno peppers, finely diced
Handful of fresh coriander, finely chopped
2 tablespoons fresh lime juice
Fine sea salt and freshly ground black pepper to taste

Cashew cream layer


2 cups raw cashews, soaked in cold water overnight
1 cup filtered water (in addition to the soaking water)
¼ cup lime juice
1 tablespoon nutritional yeast
1 teaspoon fine sea salt

Coriander lime dressing


1 cup fresh coriander, including some of the stems, roughly chopped
½ cup extra virgin olive oil
½ cup fresh lime juice
1 tablespoon apple cider vinegar
1 tablespoon honey, or to taste
Fine sea salt and freshly ground black pepper to taste

Method


Corn layer

Toss all ingredients together in a bowl and season to suit your taste.

Guacamole layer

Roughly mash together all the ingredients in a bowl and season to suit your taste.

Salsa layer

Toss all ingredients together in a bowl and season to suit your taste.

Cashew cream layer

Drain cashews and throw away the soaking water. Blend the cashews with the fresh water and remaining ingredients in a high speed blender until completely smooth. This might take a few minutes.

Coriander lime dressing

Blend all ingredients together in a high speed blender until smooth.

To assemble


Choose a large glass bowl and simply layer the salad in the order listed. Serve straight away, or cover with cling wrap and refrigerate until ready to serve.
